Elote (Mexican Street Corn)

I really don’t feel like writing a long descriptive story today about why this Elote tastes so good. I believe everyone really just needs to taste it and it will speak for itself. You can roast your corn in the oven, but I highly recommend grilling it as the smokey flavors of a grill complement the tangy sauce that is slathered on top.


Ingredients:


  • 4 Ears of Corn

  • 2 Tbsp. Canola Oil

  • 1/2c Mayonaise

  • Juice of 2 limes

  • 1 Tbsp. Cilantro, minced plus more for garnish

  • 1 Tbsp. Everything But The Elote (From Trader Joe's)

  • 1/4c Cojita cheese (half saved for garnish)


Instructions:


Rub corn with canola oil. Place corn on the grill until they get charred marks (about 10 minutes each side). While the corn is on the grill, mix together mayo, lime juice, cilantro, Elote seasoning, and cheese. Brush sauce all over grilled corn. Garnish with Cojita cheese and cilantro. Eat while warm. Enjoy!
