It's nearing the end of tomato season (sniff sniff). So we need to go out with a bang! Galettes are my favorite pastry to make on a fly because, well, they are so forgiving! I call it, the lazy girl pastry.
I went with a whole wheat flour for this recipe, but you are welcome to use white flour if you want. Just make sure it is pastry flour! Topped with hot honey, goat cheese crumbles, and micro greens, this tomato galette is a perfect love letter to tomato season. I hope you enjoy.
