This whole roasted cauliflower is the stand out dish you need for any dinner date, party, or solo meal (considering you could eat a whole cauliflower by yourself). Ingredients:
1 Cauliflower
1/3c Olive oil
1/2c Parmesan cheese
1Tsp. Dried basil
1Tsp. Dried parsley plus more for garnish
1Tsp. Dried thyme
1/2Tsp. Salt
4 Cloves garlic, minced
Black pepper, to taste
Crushed red pepper, to taste
Instructions:
Preheat oven to 400 degrees Fahrenheit. Cut off steam of cauliflower and remove any excess leaves. Set cauliflower aside. Add olive oil, basil, parsley, thyme, salt, pepper, and garlic to a bowl and mix. Pour half of the sauce on the core side of the cauliflower. Flip and cover the top of the cauliflower with the other half of the sauce. brush sauce with pastry brush. Cover any bare areas with olive oil. Place Cauliflower in a dutch oven or a pot with a lid. Bake for 35 minutes. Take out cauliflower and set oven to broil. Sprinkle parmesan over the cauliflower and place back in the oven for 4 minutes. Sprinkle with crushed red pepper and parsley. Serve warm.
